Garbure (French Cabbage and White Bean Soup)

  • 1 bay leaf
  • 4 potatoes, quartered
  • 2 carrots, peeled and quartered
  • 1 pinch salt and ground black pepper to taste

Instructions :

  • Cook and stir bacon in a massive pot till browned, approximately five minutes. Add onion and garlic; cook dinner till soft, about five mins.
  • Pick meat off the duck bones and chop. Discard pores and skin and bones. Add duck meat to the pot. Stir in fowl inventory, military beans, cabbage, turnips, celery, thyme, rosemary, and sage. Tie parsley and bay leaf together; upload to the pot. Simmer till turnips are soft, about 1 hour.
